About Madam Ng
The best of forty years of cooking, growing in a typical Penang household with a cross-cultural marriage, Madam Ng brings to you northern style Penang Chinese cuisine, with just the right balance of Indian flavour.
Born in Penang and raised in a traditional Penang Hokkien household, she grew up enjoying the traditional Hokkien dishes. And being in Penang, there was also Penang Indian fare, alongside Nyonya delights.
Sambal belacan was a must in her household, where she fondly recalls the pounding of the pestle and mortar before most meals, to ensure that the sambal has just the right consistency. A typical sample fare during CNY when she grew up would consist of Jiu Hu Char, Loh Bak, Assam Fish, Chicken Curry, Braised Sea Cucumber, Stomach and Intestine Pepper Soup, amongst others.
Having moved away after school, she stayed in different cities in Malaysia, and learnt a myriad of dishes, ranging from chicken rendang to baking to western style dishes.
As she enjoys cooking for her family, albeit a small family, she always adapts and transforms recipes to suit the taste and preferences of her family. And spicy food is something that is always a must for almost every meal!
As the family likes variety, do not be surprised if you are offered Thai fragrant rice for a meal only to find Basmathi rice for the next meal.
The meals that she shares here are meals that she cooks for her family, hence, the produce and ingredients are fresh and seasonal, bought from nearby market. Also, the quantity and availability is limited.
Because the meals are part of the family's every day, Madam Ng will only be able to offer details of the main dish. The side dish and vegetable dish that is served with each meal will be a daily surprise depending on what's fresh at the market on that day.
